Recipe: Sweet Potato Mix

If you recall, I’m trying a new thing called NEW FOOD RECIPES WITH INGREDIENTS I DON’T HATE (a new twist, still a working title).

My best friend is trying to find new things to eat and always asks for recipes. My problem is I prefer a FRIDGE DUMP (oooh that’s a better title) where I never measure and just throw things in that might be good together and things that I actually have available in my fridge or pantry. But anyway, I’ve decided I’m gonna make a cook book because why the hell not and I’ll start here.

You know the rules. I tell you what I threw in and it’s up to the reader/cooker to add, subtract, and update the ingredients to their own liking.

So here’s today’s FRIDGE DUMP for lunch – Sweet Potato Mix:

  • 1 sweet potato
  • eyeball some corn
  • throw in some black beans
  • mix in those chickpeas
  • garlic salt or herbs seasoning

I got canned corn, black beans, and chickpeas and threw them in a pot yesterday (cooking as instructed on the cans). So they were already cooked and just needed to be heated up. I threw the sweet potato in the microwave after putting some fork holes in it and cooked for 5 minutes. During the last minute I put the bowl of corn and beans in to heat up. Topped with avocado and some garlic and herbs seasoning.

This time you get a real picture because even though I didn’t try to make it look pretty it looks damn delicious. Have fun!

  1. Yummy! I love the idea of a fridge dump! It really sums up what throwing together a meal from the dregs of the week’s groceries can feel like in my house. Surprisingly, quite often they’re the yummiest of all meals. 🙂

    1. I know it’s easy because I’m making food for one but it really is something I’ve gotten used to. Because I travel often, I can sometimes have an awkward number of meals to prepare for at home. Using this fridge dump tool helps me make use of what I have remaining so I can save money and a trip to the store!
